These simple biscuits are fun to make and decorate and, as you can see, make lovely decorations to hang on the tree or put on the table. If you don’t like spice, simply use a little grated lemon peel or a teaspoon of vanilla essence instead of the mixed spice and cinnamon.
You will need
- 125g butter or margarine
- 150g castor sugar
- Yolk of 1 medium egg
- 225g plain flour
- 1 tsp (5ml) mixed spice
1 tsp (5ml) ground cinnamon - Naturally coloured writing icing (you can buy sets in the supermarket)
- Original and mini SMARTIES
You’ll also need some cutters and – if you want to hang the cookies – a straw or other suitable round shape to cut out the holes, and some red ribbon.

Method
1. Grease or line two large baking trays. Pre-heat the oven to 180°C (160°C fan assisted), 350°F, gas mark 4.
2. Cream the butter and sugar until it’s light and fluffy, then beat in the egg yolk. Stir in the flour and spice and knead it very lightly until it comes together into a dough.
3. On a floured surface (or silicon sheet) roll out the dough to about ¼inch thick, then cut out shapes. Gather up, roll out and cut any trimmings until all the dough is used up.
4. Bake for 12-15mins or until the cookies are lightly browned on top.
5. Remove from the oven and immediately cut out little holes with a straw or other small round shape. Allow the cookies to cool on a wire rack, then decorate with writing icing and SMARTIES.
