Fathers’ Day is on June 21st, and it’s the perfect time to bake a cake that the whole family can help to decorate – or just make this for Dad’s birthday or other special celebration. Ideas for men are always hard to think of, but this collar and tie will ‘suit’ anyone (!) It’s fun to make and delicious to eat, and as it’s based on one of my mixes you know it’s foolproof.

1. Turn on the oven to 200°C (180°C fan assisted/400°F, Mark 6). Grease a rectangular baking tin (about 16cm x 26cm) and line the bottom with silicon or baking parchment.

2. Make up the mix as directed on the packet, and pour into the prepared tin.

3. Bake as directed, but for only 20-25 minutes (a little quicker than as stated on the pack, because the mix will be shallower in the rectangular pan). (Pic 1)

4. Once the cake is cool, make up the frosting and spread over the top of the cake

5. Cut a template out of paper as shown – alter the size and shape as necessary to fit the cake. (Pic 2)

6. Roll out the white icing onto a surface dusted with a little icing sugar, then lay the template on top and cut around it with a sharp knife. Re-roll the trimmings and cut a second collar shape.

7. Place the collar and tie gently onto the top of the cake. Brush the collar shape with a little water, then add the extra icing collar on top.

8. Brush the ‘tie’ with a little water and decorate with the mini-SMARTIES and white chocolate stars as you wish.
