Oh dear! It’s September, and back to school or work after the holidays (although in my case I’m not sure if you can really call dressing up and pretending to be someone else work...).

These flapjacks can cheer us all up as they're such fun to make – they’ve got the goodness of peanuts, banana and oats in them, and, unlike some of the plainer ones, they’ve got some icing and SMARTIES on top to make them absolutely delicious and an even more special treat.


Banana and Peanut Flapjacks

You will need

SMARTIES Minis this product contains nuts
  • 75g butter or margarine
  • 1 heaped tbsp peanut butter
    (about 40g)
  • 1 large banana, mashed
  • 75g demerara sugar
  • 200g Rolled Oats
  • 75g icing sugar
  • 1 pack mini SMARTIES

Children should be supervised
by an adult.

This recipe makes approximately 12-20 portions.

Method

1. Pre-heat the oven to 190°C (175°C fan-assisted, 375°F). Grease a 20cm square baking pan and line the bottom with baking parchment or a silicon sheet (you can use a rectangular pan if you like – exact size doesn’t matter).

2. Melt the butter in a saucepan.

3. Take the pan off the heat and stir in the peanut butter until it is melted.

4. Stir in the mashed banana, then mix in the sugar and oats.

5. Turn the mixture out into the pan, and spread it evenly with the back of a wooden spoon.

6. Bake for 25-30 minutes until golden on top. Cut gently into 12-20 portions with a sharp knife while it’s still hot, then allow to cool in the tin.

7. While they are cooling, mix the icing sugar (no need to sieve unless it’s especially lumpy) with a tiny amount of water, adding drop by drop very carefully until it’s the right consistency for drizzling.

8. Turn out the flapjacks, using a cooling rack inverted on top, and then turn the shapes over so they are the right way up.

9. Drizzle the icing over with a fork, and add 2-3 SMARTIES onto each flapjack. Leave to set, then gently separate them.
