I’ve used my SMARTIES Party Cake mix to make these delicious and generous cupcakes. The cream cheese added to the icing mix makes a tangy, soft topping that is irresistible – and looks fabulous decorated with the SMARTIES and stars. (The little American flags are my gesture towards Thanksgiving, which is on the last Thursday in November).


Jumbo Cupcakes with Chocolate Cream Cheese Frosting

You will need

SMARTIES PARTY CAKE MIX
  • 1 Jane Asher SMARTIES Party Cake mix
  • 45g butter (instead of the 80g usually needed to cover the cake)
  • 60g cream cheese
  • 6-8 muffin cases
  • Piping bag and star nozzle (optional)

Children should be supervised
by an adult.

This recipe makes approximately 8 cupcakes.

Method

1. Make up the cake mix as directed on the packet and divide between the paper cases – it makes 8 large cupcakes or 6 huge ones!

2. Bake for 12-15mins or until the tops feel springy and a knife inserted into the centre comes out clean

3. Remove from the oven and cool on a wire rack

4. Meanwhile, make the icing: beat the butter until soft, then add the icing mix and the cream cheese. Beat well until soft and fluffy. Swirl onto the cakes with the star nozzle or with a fork, then decorate with the Smarties and chocolate stars.
