

Hooray it’s the summer holidays! This delicious ice-cream cake is very easy to make and looks as good as it tastes – the little SMARTIES hidden inside the layers of chocolate cake and vanilla ice cream make it extra special.

Starry Ice Cream Cake
You will need
- 1 packet Jane Asher SMARTIES Party Cake mix
(plus egg, water and butter as per instructions) - 500ml tub soft serve vanilla ice cream
- Summer Fruit to serve (optional)
Children should be supervised by an adult.

Method
1. Make up the cake mix as per the packet instructions. Pour the cake mix into a small, greased or lined loaf tin, and bake for 25-30 minutes, or until springy to the touch and a knife inserted in the centre comes out clean.
2. Let the cake cool in the tin for a few minutes, then turn it out onto a rack to cool completely.
3. With a sharp, serrated knife, cut the cake into four layers, horizontally (Pic 1).
4. Spread the bottom layer with about a third of the ice cream (you may have to let it soften a little, outside the freezer, until it’s easy to spoon onto the cake – don’t let it melt, though). Sprinkle it with about a third of the SMARTIES (Pic 2). Repeat for the other layers, piling them up as you go.
5. Line the loaf tin with cling film, then lift the cake into it and wrap the film around it before returning it to the freezer for up to an hour to harden up.
6. Meanwhile, make up the butter icing as directed on the pack.
7. When the cake is firm, unwrap it and spread it all over with the butter icing. Sprinkle it with the white chocolate stars, pressing some into the sides. Re-wrap and return to the freezer until you’re ready to serve.
8. Remove the cake from the freezer 10-15 minutes before serving, or until soft enough to slice. Cut into slices with a sharp knife, and serve with some summer fruits.
