Recipe

  1. 1

Blitz the biscuits into crumbs either using a food processor, or crush the biscuits gently in a sandwich bag or a bowl with the end of a rolling pin

  2. 2

Melt the light buttery spread in the microwave, then stir it into the biscuit crumbs

  3. 3

Divide the biscuit mixture evenly between your mini cheesecake moulds, and use the back of a small spoon to press it down into compact and even layers. Put them in the fridge to set while you make the filling

  4. 4

Put the cream cheese, icing sugar and vanilla extract into a mixing bowl and use an electric mixer to combine them until smooth

  5. 5

Add the whipping cream and mix until the mixture noticeably thickens

  6. 6

Pipe or spoon the cheesecake filling into the mould over the biscuit bases, use a palette knife to smooth out the tops. Place into the freezer for 2 hours to set

  7. 7

Remove the mini cheesecakes from the mould and use the black writing icing to pipe on your sporty people, and add the Smarties. Serve immediately
